Cool Cucumber Raita


Raita is one of the easiest side dishes to prepare and it goes well with spicy indian food since this dish is served cold.

Start by peeling the cucumbers. Halve it and deseed it.


Grate the cucumbers using a mandolin or food processor. Squeeze out extra moisture from the grated cucumbers using a kitchen towel or muslin cloth. 

Finely dice an onion and add it to the grated cucumber. Add in yogurt, lemon juice and salt to taste.




Keep refrigerated until it is being served.

COOL CUCUMBER RAITA
Ingredients:
2 cucumbers
1 red onion
1 cup yogurt
2 tbsp lemon juice
Salt to taste

Directions:
1) Peel cucumbers, halve it and deseed it.
2) Grate the cucumbers using a mandolin or food processor.
3) Squeeze out extra moisture from the grated cucumbers using a kitchen towel or muslin cloth.
4) Finely dice and onion and add it to the grated cucumbers.
5) Add in yogurt, lemon juice and salt to taste and stir well.
6) Keep refrigerated until it is being served.

Note:
1) Make sure the cucumbers are deseeded to ensure that the raita does not get soggy.
2) You may finely dice the cucumber for the raita instead of grating it, but make sure the cucumbers are deseeded.
